Ingredients
  

For the Rice
  • 1 cup white rice uncooked
  • 2 cups water
For the Shrimp
  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
For the Avocado
  • 2 medium avocados sliced
For the Cilantro Lime Sauce
  • 1 cup Greek yogurt
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp cilantro chopped
  • 1 clove garlic minced
  • 1 tsp salt
For Garnish
  • 1 lime lime wedges
  • 1 tbsp cilantro chopped

Method
 

Cook the Rice
  1. In a medium pot, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
Prepare the Shrimp
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. In a bowl, toss the shrimp with paprika, garlic powder, salt, and black pepper.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they are pink and opaque.
Make the Cilantro Lime Sauce
  1. In a mixing bowl, combine Greek yogurt, lime juice, chopped cilantro, minced garlic, and salt. Mix well until smooth.
Assemble the Bowls
  1. In each bowl, add a serving of rice, top with cooked shrimp, sliced avocado, and drizzle with cilantro lime sauce.
  2. Garnish with lime wedges and additional cilantro.

Notes
