Ingredients
  

Noodles and Protein
  • 12 oz udon noodles fresh or frozen
  • 1 lb shrimp peeled and deveined
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup carrot julienned
  • 1 cup snap peas trimmed
Sauce
  • 3 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp mirin optional
  • 1 tbsp sesame oil for flavor
Garnish
  • 2 tbsp green onions sliced
  • 1 tbsp sesame seeds toasted

Method
 

Prepare the Noodles
  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. If using frozen noodles, thaw them in hot water before cooking.
Stir-Fry the Shrimp and Vegetables
  1. Heat the wok over medium-high heat and add sesame oil.
  2. Add the shrimp and stir-fry until they turn pink, about 3-4 minutes.
  3. Add the bell pepper, carrot, and snap peas, and stir-fry for another 3-4 minutes until vegetables are tender-crisp.
Combine and Serve
  1. Add the cooked udon noodles to the wok, along with soy sauce and mirin. Toss everything together to combine.
  2. Cook for an additional 2 minutes, ensuring everything is heated through.
  3. Garnish with green onions and sesame seeds before serving.
