Prepare the Noodles
- Cook the udon noodles according to package instructions, then drain and set aside.
- If using frozen noodles, thaw them in hot water before cooking.
Stir-Fry the Shrimp and Vegetables
- Heat the wok over medium-high heat and add sesame oil.
- Add the shrimp and stir-fry until they turn pink, about 3-4 minutes.
- Add the bell pepper, carrot, and snap peas, and stir-fry for another 3-4 minutes until vegetables are tender-crisp.
Combine and Serve
- Add the cooked udon noodles to the wok, along with soy sauce and mirin. Toss everything together to combine.
- Cook for an additional 2 minutes, ensuring everything is heated through.
- Garnish with green onions and sesame seeds before serving.
