Prepare the Ingredients
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet in a single layer.
Roast the Sweet Potatoes
- Roast the sweet potatoes in the preheated oven for 15 minutes.
Cook the Steak and Peppers
- While the sweet potatoes are roasting, heat the remaining olive oil in a large skillet over medium-high heat.
- Add the steak bites to the skillet and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Cook the steak for about 5-7 minutes, stirring occasionally, until browned and cooked to your liking.
- Add the sliced bell peppers to the skillet and cook for an additional 3-4 minutes until they are tender.
Combine and Serve
- Once the sweet potatoes are done roasting, remove them from the oven and combine with the steak and peppers in the skillet.
- Toss everything together and serve warm.
