Ingredients
  

Steak and Vegetables
  • 1 lb sirloin steak cut into bite-sized pieces
  • 2 medium sweet potatoes peeled and diced
  • 2 medium bell peppers sliced (red and yellow preferred)
  • 3 tbsp olive oil divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Ingredients
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
Roast the Sweet Potatoes
  1. Roast the sweet potatoes in the preheated oven for 15 minutes.
Cook the Steak and Peppers
  1. While the sweet potatoes are roasting, heat the remaining olive oil in a large skillet over medium-high heat.
  2. Add the steak bites to the skillet and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Cook the steak for about 5-7 minutes, stirring occasionally, until browned and cooked to your liking.
  4. Add the sliced bell peppers to the skillet and cook for an additional 3-4 minutes until they are tender.
Combine and Serve
  1. Once the sweet potatoes are done roasting, remove them from the oven and combine with the steak and peppers in the skillet.
  2. Toss everything together and serve warm.
