White Chocolate Reese’s Cheesecake Cookies

Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips melted
  • 1 cup Reese's peanut butter cups chopped

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture until just combined.
Make the Cheesecake Filling
  1. In a separate bowl, beat the softened cream cheese and granulated sugar until smooth.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. Fold in the melted white chocolate and chopped Reese's peanut butter cups.
Assemble and Bake
  1. Scoop tablespoon-sized portions of cookie dough onto a baking sheet lined with parchment paper.
  2. Make a small indentation in the center of each cookie and fill it with the cheesecake mixture.
  3. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  4. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
