For the Cod
  • 4 fillets cod skinless, boneless
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon olive oil for drizzling
For the Coconut Lemon Cream Sauce
  • 1 cup coconut milk full-fat for creaminess
  • 1 lemon juice freshly squeezed
  • 1 teaspoon lemon zest freshly grated
  • 2 tablespoons butter unsalted
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped for garnish
  • 1 teaspoon red pepper flakes optional for heat

Method
 

Prepare the Cod
  1. Preheat the oven to 375°F (190°C).
  2. Place the cod fillets in a baking dish and season with salt and black pepper.
  3. Drizzle olive oil over the fillets.
Make the Coconut Lemon Cream Sauce
  1. In a saucepan over medium heat, melt the butter and sauté the minced garlic until fragrant.
  2. Add the coconut milk, lemon juice, and lemon zest, stirring to combine.
  3. Bring the sauce to a gentle simmer and cook for about 5 minutes, allowing it to thicken slightly.
  4. If desired, add red pepper flakes for a bit of heat.
Bake the Cod
  1. Pour the coconut lemon cream sauce over the seasoned cod fillets in the baking dish.
  2. Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
  3. Garnish with fresh parsley before serving.
