Ingredients
  

Meatloaf Base
  • 1 lb ground beef or ground turkey
  • 1 cup bread crumbs preferably seasoned
  • 1 large egg lightly beaten
  • 1 cup onion finely chopped
  • 1 cup cheddar cheese shredded
  • 1 packet taco seasoning about 1 oz
  • 1 cup salsa for topping

Method
 

Prepare the Meatloaf
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, bread crumbs, egg, onion, cheddar cheese, and taco seasoning.
  3. Mix until well combined, but do not overmix.
  4. Transfer the mixture into a loaf pan and shape it into a loaf.
Bake the Meatloaf
  1. Spread salsa evenly over the top of the meatloaf.
  2. Bake in the preheated oven for 60 minutes, or until the internal temperature reaches 160°F (70°C).
  3. Let the meatloaf rest for 10 minutes before slicing.
