Tabouli Salad (Tabbouleh)

Ingredients
  

Salad Base
  • 1 cup bulgur wheat fine or medium grind
  • 2 cups fresh parsley finely chopped
  • 1 cup tomatoes diced
  • 1/2 cup green onions sliced
  • 1/4 cup fresh mint leaves finely chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Bulgur
  1. Rinse the bulgur wheat under cold water and drain. Place it in a bowl and cover with boiling water. Let it sit for about 15 minutes until softened.
  2. Once softened, drain any excess water and fluff with a fork.
Combine Ingredients
  1. In a large mixing bowl, combine the chopped parsley, diced tomatoes, sliced green onions, and chopped mint leaves.
  2. Add the prepared bulgur to the bowl and mix well.
Make Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  2. Pour the dressing over the salad and toss to combine.
Serve
  1. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
  2. Serve chilled or at room temperature.

Notes
