Ingredients
  

  • 2 pieces zucchini, grated about 250g
  • 1 cup cooked mashed sweet potato about 250g
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons coconut flour

Method
 

  1. Preheat your oven to 160°C (350°F) and line a baking tray with baking paper.
  2. Squeeze out all the moisture from the grated zucchini.
  3. In a mixing bowl, combine the squeezed zucchini, cooked mashed sweet potato, garlic powder, sea salt, black pepper, and coconut flour. Mix thoroughly until well incorporated.
  4. Scoop the mixture and form tablespoon-sized tot shapes. Place each tot onto the prepared baking tray, spacing them apart evenly.
  5. Bake in the preheated oven for 30-35 minutes or until slightly golden brown and firm to the touch.
  6. Remove from the oven and serve warm with a dipping sauce.
