Method
- Preheat your oven to 160°C (350°F) and line a baking tray with baking paper.
- Squeeze out all the moisture from the grated zucchini.
- In a mixing bowl, combine the squeezed zucchini, cooked mashed sweet potato, garlic powder, sea salt, black pepper, and coconut flour. Mix thoroughly until well incorporated.
- Scoop the mixture and form tablespoon-sized tot shapes. Place each tot onto the prepared baking tray, spacing them apart evenly.
- Bake in the preheated oven for 30-35 minutes or until slightly golden brown and firm to the touch.
- Remove from the oven and serve warm with a dipping sauce.
