Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes washed and scrubbed
Crispy Chickpeas
  • 1 can chickpeas drained and rinsed
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
Spinach Filling
  • 4 cups fresh spinach washed and chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil for sautéing
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Tahini Sauce
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 2 tablespoons water to thin
  • 1/4 teaspoon salt

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork and place them on a baking sheet.
  2. Bake in the preheated oven for 40-45 minutes, or until tender.
Make Crispy Chickpeas
  1. In a mixing bowl, toss the drained chickpeas with olive oil, cumin, paprika, and salt.
  2. Spread the chickpeas on a baking sheet and roast in the oven for 25-30 minutes, stirring halfway through, until crispy.
Prepare Spinach Filling
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the chopped spinach, salt, and pepper. Cook until the spinach is wilted, about 3-4 minutes.
Make Tahini Sauce
  1. In a small bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth. Adjust water for desired consistency.
Assemble the Dish
  1. Once the sweet potatoes are cooked, cut them open and fluff the insides with a fork.
  2. Stuff each sweet potato with the sautéed spinach and top with crispy chickpeas.
  3. Drizzle tahini sauce over the top and serve warm.
