Method
Make the Cookie Dough
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shape and Bake Cookies
- Scoop out tablespoon-sized portions of dough and flatten them slightly.
- Place a small amount of strawberry jam in the center of half of the cookies.
- Top with the remaining cookies, sealing the edges by pressing down.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Prepare the Glaze
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Once the cookies are cooled, drizzle the glaze over the top and sprinkle with colorful sprinkles.
