Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Strawberry Filling
  • 1/2 cup strawberry jam
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon sprinkles for topping

Method
 

Make the Cookie Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shape and Bake Cookies
  1. Scoop out tablespoon-sized portions of dough and flatten them slightly.
  2. Place a small amount of strawberry jam in the center of half of the cookies.
  3. Top with the remaining cookies, sealing the edges by pressing down.
  4. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Prepare the Glaze
  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  2. Once the cookies are cooled, drizzle the glaze over the top and sprinkle with colorful sprinkles.
