Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup chopped strawberries fresh or frozen
Strawberry Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon strawberry puree from fresh strawberries

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the oats and chopped strawberries.
Bake the Cookies
  1. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Make the Icing
  1. In a small bowl, whisk together the powdered sugar, milk, and strawberry puree until smooth.
  2. Once the cookies are completely cool, drizzle the icing over the top of each cookie.
