Ingredients
  

Salad Base
  • 2 cups cabbage shredded
  • 1 cup carrots julienned
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
  • 1 cup fresh herbs such as mint and cilantro
  • 1 cup bean sprouts
Spicy Ginger Dressing
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger grated
  • 1 clove garlic minced
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon maple syrup or honey

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded cabbage, julienned carrots, sliced cucumber, sliced red bell pepper, fresh herbs, and bean sprouts.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, sriracha, and maple syrup until well combined.
Combine and Serve
  1. Drizzle the spicy ginger dressing over the salad and toss to coat evenly.
  2. Serve immediately, garnished with additional herbs if desired.

Notes
