Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and cubed
Dairy
  • 1/2 cup milk whole or 2%
  • 4 ounces smoked Gouda cheese shredded
  • 4 tablespoons butter unsalted
Seasoning
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon garlic powder optional

Method
 

Prepare the Potatoes
  1. Place the cubed potatoes in a large pot and cover with cold water. Add salt.
  2. Bring the water to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.
Mash and Mix
  1. Drain the potatoes in a colander and return them to the pot.
  2. Add butter, milk, smoked Gouda, garlic powder, salt, and pepper to the potatoes.
  3. Mash the potatoes until smooth and creamy, adjusting the consistency with more milk if needed.
Serve
  1. Taste and adjust seasoning if necessary. Serve warm, garnished with extra cheese if desired.
