Ingredients
  

Chicken Filling
  • 1 lb boneless, skinless chicken breasts cut into chunks
  • 1 tbsp olive oil for cooking
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Taco Assembly
  • 8 small corn tortillas
  • 2 cups romaine lettuce shredded
  • 1/2 cup Caesar dressing
  • 1/4 cup Parmesan cheese grated
  • 1/4 cup croutons optional, for crunch

Method
 

Cook Chicken
  1. Heat olive oil in a skillet over medium heat. Add chicken chunks and season with garlic powder, onion powder, salt, and pepper. Cook for about 10-12 minutes, or until chicken is cooked through.
  2. Once cooked, use tongs to smash the chicken into smaller pieces in the skillet.
Prepare Tacos
  1. Warm the corn tortillas in a separate skillet or microwave until pliable.
  2. In a mixing bowl, combine the shredded romaine lettuce with Caesar dressing, tossing to coat evenly.
  3. To assemble, place a portion of the smashed chicken on each tortilla, top with the dressed lettuce, and sprinkle with Parmesan cheese and croutons if desired.
