Ingredients
  

Bell Pepper Boats
  • 4 medium bell peppers halved and seeds removed
Filling
  • 1 cup cooked chicken shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup salsa your choice of heat
  • 1 cup shredded low-fat cheese for topping
Toppings
  • 1/2 cup sour cream optional
  • 1/4 cup green onions chopped
  • 1/4 cup jalapeños sliced, optional

Method
 

Prepare the Bell Peppers
  1. Preheat the oven to 375°F (190°C).
  2. Slice the bell peppers in half lengthwise and remove the seeds.
Make the Filling
  1. In a mixing bowl, combine the shredded chicken, black beans, corn, and salsa.
Assemble the Nacho Boats
  1. Spoon the filling mixture into each bell pepper half.
  2. Top with shredded cheese.
Bake
  1. Place the filled bell peppers on a baking sheet and bake for 20 minutes or until the peppers are tender and the cheese is melted.
Serve
  1. Remove from the oven and let cool slightly.
  2. Top with sour cream, green onions, and jalapeños if desired before serving.
