Ingredients
  

Bread Dough
  • 2 cups all-purpose flour plus more for dusting
  • 1 cup warm water about 110°F
  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil
Caprese Filling
  • 1 cup fresh mozzarella cheese diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh basil leaves chopped
  • 1 tablespoon balsamic vinegar optional
  • 1 teaspoon black pepper freshly ground

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour, salt, and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.
Prepare the Filling
  1. In a separate bowl, combine diced mozzarella, halved cherry tomatoes, chopped basil, balsamic vinegar, and black pepper.
  2. Mix gently to combine and set aside.
Assemble the Bread
  1. Preheat the oven to 375°F (190°C).
  2. Once the dough has risen, punch it down and roll it out into a rectangle on a floured surface.
  3. Spread the Caprese filling evenly over the dough.
  4. Roll the dough tightly from one end to the other, pinching the seams to seal.
  5. Place the rolled dough into a greased loaf pan and let it rise for another 30 minutes.
  6. Bake in the preheated oven for 25-30 minutes or until golden brown.
Cool and Serve
  1. Remove the bread from the oven and let it cool in the pan for 10 minutes.
  2. Transfer to a wire rack to cool completely before slicing.
  3. Serve warm or at room temperature, optionally drizzled with more balsamic vinegar.
