Method
Prepare the Rum Mixture
- In a mixing bowl, combine dark rum, brown sugar, and vanilla extract. Stir until the sugar is dissolved.
Soak the Pineapple
- Add the pineapple rings to the rum mixture and let them soak for at least 10 minutes.
Fry the Pineapple
- In a frying pan, heat butter and coconut oil over medium heat. Once melted, add the soaked pineapple rings.
- Fry for about 3-4 minutes on each side until golden brown and caramelized.
Serve
- Sprinkle with cinnamon and serve warm, optionally with ice cream or whipped cream.
