Ingredients
  

Pineapple
  • 1 medium pineapple peeled, cored, and sliced into rings
Rum Mixture
  • 1/4 cup dark rum for soaking
  • 2 tablespoons brown sugar for sweetness
  • 1 teaspoon vanilla extract for flavor
Frying Ingredients
  • 2 tablespoons butter for frying
  • 1 tablespoon coconut oil for frying
  • 1 teaspoon cinnamon for sprinkling

Method
 

Prepare the Rum Mixture
  1. In a mixing bowl, combine dark rum, brown sugar, and vanilla extract. Stir until the sugar is dissolved.
Soak the Pineapple
  1. Add the pineapple rings to the rum mixture and let them soak for at least 10 minutes.
Fry the Pineapple
  1. In a frying pan, heat butter and coconut oil over medium heat. Once melted, add the soaked pineapple rings.
  2. Fry for about 3-4 minutes on each side until golden brown and caramelized.
Serve
  1. Sprinkle with cinnamon and serve warm, optionally with ice cream or whipped cream.
