Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, toss the halved baby potatoes with olive oil, oregano, thyme, salt, and pepper until well coated.
Roast the Potatoes
- Spread the potatoes out on a baking sheet in a single layer.
- Add the unpeeled garlic cloves to the baking sheet.
- Place the feta cheese block in the center of the baking sheet.
- Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden and crispy.
Serve
- Remove from the oven and let cool slightly.
- Serve the roasted potatoes and garlic with the baked feta on top, drizzling any pan juices over the dish.
