Ingredients
  

Potatoes
  • 2 pounds baby potatoes halved
Feta
  • 8 ounces feta cheese block
Garlic
  • 6 cloves garlic unpeeled
Olive Oil
  • 3 tablespoons olive oil extra virgin
Herbs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
Salt and Pepper
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the halved baby potatoes with olive oil, oregano, thyme, salt, and pepper until well coated.
Roast the Potatoes
  1. Spread the potatoes out on a baking sheet in a single layer.
  2. Add the unpeeled garlic cloves to the baking sheet.
  3. Place the feta cheese block in the center of the baking sheet.
  4. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden and crispy.
Serve
  1. Remove from the oven and let cool slightly.
  2. Serve the roasted potatoes and garlic with the baked feta on top, drizzling any pan juices over the dish.
