Ingredients
  

Mini Peppers
  • 1 pound mini sweet peppers halved and seeded
Olive Oil
  • 2 tablespoons extra virgin olive oil for drizzling
Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder optional

Method
 

Prepare the Peppers
  1. Preheat the oven to 400°F (200°C).
  2. Wash the mini peppers, slice them in half, and remove the seeds.
Season and Roast
  1. In a mixing bowl, toss the halved peppers with olive oil, salt, black pepper, and garlic powder until evenly coated.
  2. Spread the peppers in a single layer on a baking sheet.
  3. Roast in the preheated oven for 15-20 minutes, or until the peppers are tender and slightly charred.
Serve
  1. Remove from the oven and let cool slightly before serving.
  2. Enjoy warm as a side dish or appetizer.
