Method
Prepare the Garlic
- Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Once roasted, squeeze the garlic cloves out of their skins and mash them into a paste.
Prepare the Potatoes
- In a mixing bowl, combine the heavy cream, milk, mashed garlic, salt, and pepper. Whisk until well combined.
- Layer half of the sliced potatoes in a greased baking dish, pour half of the cream mixture over them, and sprinkle with half of the cheeses.
- Repeat the layers with the remaining potatoes, cream mixture, and cheeses, finishing with a layer of cheese on top.
Bake the Dish
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 20-30 minutes until the top is golden and the potatoes are tender.
- Let it cool for a few minutes before serving, garnished with fresh thyme.
