Roasted Garlic Potatoes au Gratin

Ingredients
  

Potatoes and Garlic
  • 2 pounds Russet potatoes peeled and thinly sliced
  • 1 head garlic roasted
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Cheese Topping
  • 1 cup grated Gruyère cheese
  • 1 cup grated Parmesan cheese
Herbs
  • 1 tablespoon fresh thyme chopped

Method
 

Prepare the Garlic
  1. Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Once roasted, squeeze the garlic cloves out of their skins and mash them into a paste.
Prepare the Potatoes
  1. In a mixing bowl, combine the heavy cream, milk, mashed garlic, salt, and pepper. Whisk until well combined.
  2. Layer half of the sliced potatoes in a greased baking dish, pour half of the cream mixture over them, and sprinkle with half of the cheeses.
  3. Repeat the layers with the remaining potatoes, cream mixture, and cheeses, finishing with a layer of cheese on top.
Bake the Dish
  1. Cover the baking dish with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 20-30 minutes until the top is golden and the potatoes are tender.
  3. Let it cool for a few minutes before serving, garnished with fresh thyme.

Notes
