Ingredients
  

Roasted Garlic
  • 1 head garlic roasted
Cheese Mixture
  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 1 cup sour cream
  • 1 tbsp fresh thyme chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Serving
  • 1 bag tortilla chips for dipping
  • 1 bunch fresh vegetables like carrots and celery for dipping

Method
 

Roast the Garlic
  1. Preheat the oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in foil. Roast for 30 minutes until soft.
Prepare the Dip
  1. In a mixing bowl, combine the softened goat cheese, cream cheese, sour cream, chopped thyme, lemon juice, salt, and black pepper. Mix until smooth.
Add Roasted Garlic
  1. Once the garlic is roasted and cool enough to handle, squeeze the cloves out of their skins into the cheese mixture. Blend using a food processor until creamy and well combined.
Serve
  1. Transfer the dip to a serving bowl and serve with tortilla chips and fresh vegetables.

Notes
