Method
Roast the Garlic
- Preheat the oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in foil. Roast for 30 minutes until soft.
Prepare the Dip
- In a mixing bowl, combine the softened goat cheese, cream cheese, sour cream, chopped thyme, lemon juice, salt, and black pepper. Mix until smooth.
Add Roasted Garlic
- Once the garlic is roasted and cool enough to handle, squeeze the cloves out of their skins into the cheese mixture. Blend using a food processor until creamy and well combined.
Serve
- Transfer the dip to a serving bowl and serve with tortilla chips and fresh vegetables.
