Vegetables
  • 1 lb Carrots peeled and cut into sticks
  • 1 lb Green Beans trimmed
  • 2 tbsp Olive Oil for roasting
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tsp Garlic Powder optional

Method
 

Prepare the Vegetables
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the carrots and green beans.
  3. Drizzle with olive oil, and sprinkle with salt, pepper, and garlic powder. Toss to coat evenly.
Roast the Vegetables
  1. Spread the vegetables in a single layer on a baking sheet.
  2. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until tender and slightly caramelized.
  3. Remove from the oven and serve warm.
