Ingredients
  

Filling
  • 2 cups cooked chicken shredded
  • 1 cup frozen mixed vegetables
  • 1/3 cup butter unsalted
  • 1/3 cup all-purpose flour
  • 1 cup chicken broth low sodium
  • 1/2 cup milk whole
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Biscuit Topping
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter cold and cubed
  • 1 cup shredded cheddar cheese
  • 3/4 cup milk whole

Method
 

Prepare the Filling
  1. In a skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  2. Gradually whisk in the chicken broth and milk, cooking until the mixture thickens, about 5 minutes.
  3. Add the shredded chicken, mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir to combine and remove from heat.
Make the Biscuit Topping
  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in the cheddar cheese and milk until just combined.
Assemble and Bake
  1. Preheat the oven to 400°F (200°C).
  2. Pour the chicken filling into a baking dish.
  3. Drop spoonfuls of the biscuit dough over the filling.
  4. Bake for 25-30 minutes or until the biscuits are golden brown and cooked through.
