Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • 1/2 cup ranch dressing for marinating
  • 3 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1 tsp black pepper to taste
  • 1 tsp salt to taste
Vegetables (optional)
  • 1 bell pepper cut into chunks
  • 1 zucchini sliced
  • 1 red onion cut into chunks

Method
 

Marinate the Chicken
  1. In a large bowl, combine ranch dressing, minced garlic, grated Parmesan cheese, black pepper, and salt.
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken and optional vegetables onto the skewers, alternating between chicken and vegetables.
Grill the Skewers
  1. Preheat the grill to medium-high heat.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes before serving.
  2. Serve warm with extra ranch dressing on the side for dipping.
