Ingredients
  

Filling
  • 1 can pumpkin puree 15 oz
  • 1 cup brown sugar packed
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup milk
Topping
  • 1 cup all-purpose flour
  • 1 cup pecans chopped
  • 1 cup oats rolled
  • 1/2 cup butter melted
  • 1/2 cup brown sugar packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, vanilla extract, eggs, and milk. Mix until smooth.
Prepare the Topping
  1. In another bowl, mix flour, chopped pecans, oats, melted butter, brown sugar, baking powder, and salt until crumbly.
Assemble and Bake
  1. Pour the pumpkin filling into a greased 9-inch baking dish.
  2. Sprinkle the topping mixture evenly over the pumpkin filling.
  3. Bake in the preheated oven for 45 minutes or until the topping is golden brown.
Serve
  1. Let cool for a few minutes before serving. Enjoy warm, optionally with whipped cream.
