Method
Prepare the Crust
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a greased 9x13 inch baking pan.
- Bake for 10 minutes, then remove from oven and set aside.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add pumpkin puree, sugar, vanilla extract, and mix until combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in cinnamon, nutmeg, ginger, and salt until smooth.
Assemble and Bake
- Pour the cheesecake filling over the baked crust and spread evenly.
- In a separate bowl, mix flour, brown sugar, oats, cinnamon, and cubed butter until crumbly.
- Sprinkle the streusel topping over the cheesecake filling.
- Bake for 35-40 minutes or until the center is set.
- Allow to cool completely before slicing into bars.
