Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 2 packages cream cheese softened
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1/2 cup rolled oats
  • 1/2 teaspoon ground cinnamon

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a greased 9x13 inch baking pan.
  4. Bake for 10 minutes, then remove from oven and set aside.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add pumpkin puree, sugar, vanilla extract, and mix until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in cinnamon, nutmeg, ginger, and salt until smooth.
Assemble and Bake
  1. Pour the cheesecake filling over the baked crust and spread evenly.
  2. In a separate bowl, mix flour, brown sugar, oats, cinnamon, and cubed butter until crumbly.
  3. Sprinkle the streusel topping over the cheesecake filling.
  4. Bake for 35-40 minutes or until the center is set.
  5. Allow to cool completely before slicing into bars.
