Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup pistachios finely chopped
  • 1/2 cup dried cranberries chopped
  • 2 tbsp cornstarch optional for extra tenderness

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy. Add vanilla extract and mix thoroughly.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, salt, and optional cornstarch.
  4. Gradually add the dry ingredient mixture to the creamed butter mixture, mixing until a cohesive dough forms.
  5. Gently fold in the finely chopped pistachios and dried cranberries.
  6. Shape the dough into small balls and make a hole in the center of each ball to create a wreath form.
  7. Arrange the cookies on the prepared baking sheet with space apart. Bake for 12-15 minutes until the edges are light golden brown.
  8. Transfer the baked cookies to a wire rack to cool completely. Decorate with additional chopped pistachios and dried cranberries, then dust with powdered sugar.
