Persian Stuffed Onions Recipe (Dolmeh Piaz)

Ingredients
  

Stuffing
  • 4 medium onions peeled and hollowed
  • 1 cup rice rinsed and drained
  • 1 lb ground beef or lamb
  • 1 medium tomato chopped
  • 1 teaspoon cinnamon
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup water for cooking
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 lemon sliced for serving

Method
 

Prepare the Onions
  1. Cut the tops off the onions and hollow them out carefully, leaving the outer layers intact.
  2. Soak the hollowed onions in salted water for 15 minutes to soften.
Make the Filling
  1. In a skillet, heat vegetable oil over medium heat.
  2. Add ground beef and cook until browned, then add chopped tomato, cinnamon, turmeric, salt, and pepper.
  3. Stir in the rinsed rice and mix well.
  4. Add 1 cup of water, cover, and simmer for 15 minutes until rice is partially cooked.
Stuff the Onions
  1. Carefully stuff each onion with the meat and rice mixture, pressing down gently.
Cook the Stuffed Onions
  1. Place the stuffed onions upright in a baking dish.
  2. Add remaining water to the dish and cover with foil.
  3. Bake in a preheated oven at 350°F (175°C) for 45 minutes.
Garnish and Serve
  1. Remove from oven, garnish with chopped parsley and lemon slices.
  2. Serve warm with additional lemon on the side.
