Ingredients
  

Wet Ingredients
  • 1 cup peanut butter creamy or crunchy
  • 1 cup sugar can substitute with brown sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
Zucchini and Chocolate Chips
  • 1 cup zucchini grated and excess moisture squeezed out
  • 0.5 cup chocolate chips semi-sweet or dark

Method
 

Prepare the Oven and Pan
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the peanut butter, sugar, eggs, and vanilla extract until smooth.
Mix Dry Ingredients
  1. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
Combine Ingredients
  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  2. Fold in the grated zucchini and chocolate chips.
Bake the Bread
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and enjoy your peanut butter chocolate chip zucchini bread!
