Ingredients

  • 1 12oz box vanilla wafer cookies
  • 1 1/4 cup pecans
  • 2 cups coconut flakes coarsely chopped for coating
  • 2 cups powdered sugar
  • 3/4 cup orange juice concentrate
  • 1/2 tsp vanilla extract
  • 1 stick unsalted butter softened

Equipment

  • Food processor
  • Mixing Bowl
  • hand mixer
  • Cookie scoop
  • cookie sheet
  • Airtight container

Method

  1. In a food processor, pulse the vanilla wafers into a very fine crumb. Transfer to a mixing bowl. Next, pulse the pecans into a fine crumb and add these to the bowl with the wafers. Finally, pulse the coconut flakes until coarsely chopped and transfer them to a separate shallow dish for later use.
  2. To the bowl containing the pecan and wafer crumbs, add powdered sugar, orange juice concentrate, vanilla extract, and softened unsalted butter. Using a hand mixer, blend all ingredients until the mixture is thoroughly combined and forms a workable dough.
  3. Using a small cookie scoop, portion out the dough and use your hands to roll each portion into a ball.
  4. Roll each formed ball in the coarsely chopped coconut flakes, ensuring an even coating. Place the coated snowballs onto a cookie sheet.
  5. Chill the snowballs in the refrigerator until firm, about 1 hour. Once firm, transfer them to an airtight container for storage. Keep refrigerated to maintain freshness.
