Ingredients
  

For the Bacon
  • 8 slices bacon thick-cut
For the Cheese Mixture
  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 tbsp honey for sweetness
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp black pepper freshly ground
For Garnish
  • 2 tbsp chopped pecans toasted
  • 1 tbsp chopped chives for garnish

Method
 

Cook the Bacon
  1. Preheat the oven to 400°F (200°C). Place the bacon slices on a baking sheet and bake for 15 minutes or until crispy.
  2. Remove from oven and let cool on paper towels to absorb excess grease.
Prepare the Cheese Mixture
  1. In a mixing bowl, combine the softened goat cheese, cream cheese, honey, rosemary, thyme, and black pepper. Mix until smooth and well combined.
Assemble the Log
  1. Lay out a piece of plastic wrap on a flat surface. Spread the cheese mixture into a log shape on the plastic wrap.
  2. Crumble the cooked bacon over the cheese log, pressing gently to adhere.
  3. Using the plastic wrap, roll the log tightly and twist the ends to seal. Refrigerate for at least 1 hour to firm up.
Serve
  1. Once chilled, unwrap the log and place it on a serving platter. Garnish with chopped pecans and chives.
  2. Serve with crackers or sliced baguette.
