Method
Cook the Bacon
- Preheat the oven to 400°F (200°C). Place the bacon slices on a baking sheet and bake for 15 minutes or until crispy.
- Remove from oven and let cool on paper towels to absorb excess grease.
Prepare the Cheese Mixture
- In a mixing bowl, combine the softened goat cheese, cream cheese, honey, rosemary, thyme, and black pepper. Mix until smooth and well combined.
Assemble the Log
- Lay out a piece of plastic wrap on a flat surface. Spread the cheese mixture into a log shape on the plastic wrap.
- Crumble the cooked bacon over the cheese log, pressing gently to adhere.
- Using the plastic wrap, roll the log tightly and twist the ends to seal. Refrigerate for at least 1 hour to firm up.
Serve
- Once chilled, unwrap the log and place it on a serving platter. Garnish with chopped pecans and chives.
- Serve with crackers or sliced baguette.
