Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour sifted
  • 1/4 teaspoon salt preferably sea salt
  • 1/4 cup coarse sea salt for topping

Method
 

Prepare the Dough
  1. In a mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Add the vanilla extract and mix until combined.
  3. Gradually add the sifted flour and salt, mixing until the dough comes together.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Shape and Bake
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll out the chilled dough on a lightly floured surface to about 1/4 inch thick.
  3. Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
  4. Sprinkle the tops with coarse sea salt.
  5. Bake for 10-12 minutes or until the edges are lightly golden.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
