Method
Prepare the Dough
- In a mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Add the vanilla extract and mix until combined.
- Gradually add the sifted flour and salt, mixing until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Shape and Bake
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a lightly floured surface to about 1/4 inch thick.
- Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
- Sprinkle the tops with coarse sea salt.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
