Method
Marinate the Chicken
- In a mixing bowl, combine olive oil, lemon juice, oregano, garlic, salt, and pepper. Add the chicken breasts and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
Cook the Chicken
- Heat a large skillet over medium heat. Remove chicken from marinade and add to the skillet. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
Prepare the Sauce
- In the same skillet, add artichoke hearts and olives. Sauté for 3-4 minutes until heated through. Pour in chicken broth and bring to a simmer.
Combine and Serve
- Return the chicken to the skillet, spooning some of the sauce over the top. Simmer for an additional 5 minutes. Garnish with fresh parsley before serving.
