Ingredients
  

Marinade
  • 4 tablespoons olive oil extra virgin
  • 2 lemons juice freshly squeezed
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Main Ingredients
  • 4 pieces chicken breasts boneless, skinless
  • 1 can artichoke hearts drained and quartered
  • 1/2 cup black olives pitted and sliced
  • 1 cup chicken broth low sodium
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, oregano, garlic, salt, and black pepper. Mix well.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Cook the Chicken
  1. Heat a large skillet over medium-high heat. Remove chicken from marinade and place in the skillet.
  2. Cook the chicken for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
Prepare the Sauce
  1. In the same skillet, add the chicken broth, artichoke hearts, and black olives. Bring to a simmer.
  2. Return the chicken to the skillet and cook for an additional 5 minutes, allowing the flavors to meld.
Serve
