Ingredients
  

Protein
  • 1 lb ground beef preferably lean
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Seasonings
  • 2 tbsp olive oil for cooking
  • 2 cloves garlic minced
  • 1 tsp oregano dried
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cook the Beef
  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  2. Drain excess fat if necessary.
Add Vegetables
  1. Add minced garlic, bell pepper, and zucchini to the skillet. Stir-fry for about 5 minutes until vegetables are tender.
  2. Add cherry tomatoes and spinach, cooking until spinach wilts, about 2-3 minutes.
Season and Serve
  1. Sprinkle oregano, salt, and black pepper over the stir-fry. Mix well to combine and cook for an additional 2 minutes.
  2. Serve hot, optionally over rice or with pita bread.
