Ingredients
  

Chicken and Marinade
  • 4 pieces boneless, skinless chicken breasts sliced into strips
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup zucchini sliced
  • 1 cup bell pepper sliced
  • 1 cup red onion sliced
  • 1 cup kalamata olives pitted and halved
  • 1/4 cup feta cheese crumbled
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 lemon juiced

Method
 

Prepare the Chicken
  1. In a bowl, combine chicken strips with olive oil, garlic powder, paprika, oregano, salt, and pepper. Mix well and let marinate for 10 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes. Remove from skillet and set aside.
Cook the Vegetables
  1. In the same skillet, add the cherry tomatoes, zucchini, bell pepper, and red onion. Sauté for about 5-7 minutes until the vegetables are tender.
  2. Stir in the kalamata olives and cooked chicken. Cook for an additional 2-3 minutes to heat through.
Serve
  1. Remove from heat and sprinkle with feta cheese, parsley, and lemon juice before serving.
  2. Serve warm with a side of rice or quinoa if desired.
