Prepare the Chicken
- In a bowl, combine chicken strips with olive oil, garlic powder, paprika, oregano, salt, and pepper. Mix well and let marinate for 10 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes. Remove from skillet and set aside.
Cook the Vegetables
- In the same skillet, add the cherry tomatoes, zucchini, bell pepper, and red onion. Sauté for about 5-7 minutes until the vegetables are tender.
- Stir in the kalamata olives and cooked chicken. Cook for an additional 2-3 minutes to heat through.
Serve
- Remove from heat and sprinkle with feta cheese, parsley, and lemon juice before serving.
- Serve warm with a side of rice or quinoa if desired.
