Ingredients
  

Fish
  • 4 fillets white fish (such as cod or tilapia) skinless
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup zucchini sliced
  • 1 cup bell pepper sliced
  • 1 medium red onion sliced
Herbs and Spices
  • 3 tablespoons olive oil extra virgin
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Lemon
  • 1 medium lemon juiced and zested

Method
 

Prepare the Ingredients
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the cherry tomatoes, zucchini, bell pepper, and red onion.
Season the Vegetables
  1. Drizzle the olive oil over the vegetables and sprinkle with oregano, garlic powder, salt, and pepper. Toss to coat evenly.
Arrange in Baking Dish
  1. Spread the seasoned vegetables in an even layer in a baking dish.
  2. Place the fish fillets on top of the vegetables.
Add Lemon and Bake
  1. Drizzle the lemon juice over the fish and vegetables, and sprinkle with lemon zest.
  2. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
Serve
  1. Remove from the oven and let cool for a few minutes before serving. Enjoy your Mediterranean baked fish!
