Ingredients
  

Dry Ingredients
  • 2 cups rice cereal such as Rice Krispies
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
Mix-Ins
  • 2 cups mini marshmallows
  • 1/2 cup chocolate chips optional

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the dry ingredients: rice cereal, flour, baking powder, and salt.
Mix Wet Ingredients
  1. In another bowl, whisk together the melted butter, brown sugar, granulated sugar, vanilla extract, and egg until smooth.
Combine Mixtures
  1. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  2. Fold in the mini marshmallows and chocolate chips if using.
Bake the Cookies
  1. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Cool and Serve
  1. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
