Prepare the Chili
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add diced onion and minced garlic to the pot and sauté until the onion is translucent.
- Stir in the diced tomatoes, kidney beans, black beans, bourbon, maple syrup, chili powder, cumin, smoked paprika, beef broth, salt, and pepper.
- Bring to a simmer, then reduce heat and let it cook for about 45 minutes, stirring occasionally.
- Add the cooked bacon back into the chili and stir well before serving.
Make the Cornbread Waffles
- In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Preheat the waffle iron and lightly grease it. Pour the batter into the waffle iron and cook according to the manufacturer's instructions until golden brown.
Serve
- Place a cornbread waffle on a plate and ladle the maple bacon bourbon chili over the top.
- Garnish with additional bacon, green onions, or cheese if desired.
- Serve hot and enjoy!
