Ingredients
  

Chili Ingredients
  • 6 slices bacon chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 can kidney beans 15 oz, drained and rinsed
  • 1 can black beans 15 oz, drained and rinsed
  • 2 tablespoons bourbon optional
  • 1 tablespoon maple syrup for sweetness
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 cup beef broth or vegetable broth
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Cornbread Waffle Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1/4 cup butter melted

Method
 

Prepare the Chili
  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add diced onion and minced garlic to the pot and sauté until the onion is translucent.
  3. Stir in the diced tomatoes, kidney beans, black beans, bourbon, maple syrup, chili powder, cumin, smoked paprika, beef broth, salt, and pepper.
  4. Bring to a simmer, then reduce heat and let it cook for about 45 minutes, stirring occasionally.
  5. Add the cooked bacon back into the chili and stir well before serving.
Make the Cornbread Waffles
  1. In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Preheat the waffle iron and lightly grease it. Pour the batter into the waffle iron and cook according to the manufacturer's instructions until golden brown.
Serve
  1. Place a cornbread waffle on a plate and ladle the maple bacon bourbon chili over the top.
  2. Garnish with additional bacon, green onions, or cheese if desired.
  3. Serve hot and enjoy!

Notes
