Ingredients
  

Chicken Salad
  • 2 cups cooked chicken breast shredded or diced
  • 1 cup Greek yogurt plain, for dressing
  • 1/2 cup bacon cooked and crumbled
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup green onions chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Lettuce Wraps
  • 8 leaves romaine lettuce or butter lettuce

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, Greek yogurt, crumbled bacon, cherry tomatoes, green onions, lemon juice, dijon mustard, salt, and pepper. Mix well until all ingredients are combined.
  2. Taste and adjust seasoning if necessary.
Assemble Wraps
  1. Lay out the lettuce leaves on a serving platter.
  2. Spoon the chicken salad mixture into the center of each lettuce leaf.
  3. Fold the lettuce over the filling and enjoy as a wrap.
