Ingredients
  

Pasta
  • 8 oz capellini pasta or angel hair pasta
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh basil chopped
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest
  • 1 tsp honey optional
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the capellini pasta and cook according to package instructions until al dente, about 3-5 minutes.
  2. Drain the pasta in a colander and rinse under cold water to stop the cooking process. Set aside.
Prepare the Dressing
  1. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, honey, salt, and black pepper until well combined.
Combine Salad Ingredients
  1. In a large mixing bowl, combine the cooked capellini, cherry tomatoes, cucumber, red onion, and fresh basil.
  2. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
Serve
  1. Transfer the salad to a serving platter and serve immediately, or refrigerate for 30 minutes for flavors to meld.

Notes
