Ingredients
  

Chicken Marinade
  • 1 lb boneless chicken thighs skinless
  • 3 tbsp soy sauce low sodium
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tsp black pepper
Gochujang Cream Sauce
  • 1/2 cup sour cream
  • 2 tbsp gochujang
  • 1 tbsp lime juice
  • 1 tbsp honey
Rice and Vegetables
  • 2 cups cooked rice white or brown
  • 1 cup carrots sliced
  • 1 cup cucumber sliced
  • 1 cup green onions chopped
  • 1 cup red cabbage shredded

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, sesame oil, honey, rice vinegar, minced garlic, grated ginger, and black pepper. Add the chicken thighs and marinate for at least 20 minutes.
  2. Preheat the grill to medium-high heat.
Cook the Chicken
  1. Grill the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked. Remove from the grill and let rest for a few minutes before slicing.
Prepare the Gochujang Cream Sauce
  1. In a small bowl, whisk together sour cream, gochujang, lime juice, and honey until smooth. Adjust seasoning to taste.
Assemble the Bowls
  1. In serving bowls, layer cooked rice, sliced grilled chicken, carrots, cucumber, green onions, and red cabbage. Drizzle with gochujang cream sauce.
  2. Serve immediately and enjoy!

Notes

Feel free to adjust the spice level of the gochujang cream sauce by adding more or less gochujang according to your taste.
