Method
Prepare the Shrimp
- In a mixing bowl, combine shrimp with jerk seasoning and olive oil. Toss to coat evenly.
- Let the shrimp marinate for at least 15 minutes.
Cook the Rice
- In a pot, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
- Once cooked, fluff the rice with a fork and stir in pineapple chunks, basil, soy sauce, lime juice, and salt. Mix well.
Grill the Shrimp
- Preheat the grill to medium-high heat.
- Thread shrimp onto skewers and grill for 2-3 minutes on each side, or until shrimp are opaque and cooked through.
Serve
- Serve the grilled jerk shrimp over a bed of pineapple basil rice.
- Garnish with additional basil if desired.
