Ingredients
  

Jerk Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp jerk seasoning store-bought or homemade
  • 1 tbsp olive oil for grilling
Pineapple Basil Rice
  • 1 cup jasmine rice rinsed
  • 1 1/2 cups water
  • 1 cup pineapple chunks fresh or canned
  • 1/4 cup fresh basil chopped
  • 1 tbsp soy sauce optional
  • 1 tbsp lime juice freshly squeezed
  • 1 pinch salt to taste

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine shrimp with jerk seasoning and olive oil. Toss to coat evenly.
  2. Let the shrimp marinate for at least 15 minutes.
Cook the Rice
  1. In a pot, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
  2. Once cooked, fluff the rice with a fork and stir in pineapple chunks, basil, soy sauce, lime juice, and salt. Mix well.
Grill the Shrimp
  1. Preheat the grill to medium-high heat.
  2. Thread shrimp onto skewers and grill for 2-3 minutes on each side, or until shrimp are opaque and cooked through.
Serve
  1. Serve the grilled jerk shrimp over a bed of pineapple basil rice.
  2. Garnish with additional basil if desired.

Notes

For a spicier kick, add chopped Scotch bonnet pepper to the shrimp marinade.
