Prepare Sushi Rice
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
- Once cooked, transfer the rice to a mixing bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold this mixture into the rice gently.
Assemble the Sushi
- Place a sheet of plastic wrap on the sushi mat. Spread a thin layer of sushi rice over the plastic wrap, leaving a small border at the top.
- Layer the mozzarella, prosciutto, roasted red peppers, and basil on top of the rice.
- Using the sushi mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.
Slice and Serve
- Using a sharp knife, slice the sushi roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
- Serve the Italian sushi with a dipping sauce made from balsamic vinegar, olive oil, and Italian herbs.
