Ingredients
  

Sushi Rice
  • 2 cups sushi rice rinsed
  • 2.5 cups water for cooking
  • 1 tablespoon rice vinegar for seasoning
  • 1 teaspoon sugar for seasoning
  • 1 teaspoon salt for seasoning
Filling
  • 1 cup mozzarella cheese sliced into strips
  • 1 cup prosciutto thinly sliced
  • 1 cup roasted red peppers sliced
  • 1 cup fresh basil leaves for flavor
Dipping Sauce
  • 1 tablespoon balsamic vinegar for dipping
  • 1 tablespoon olive oil for dipping
  • 1 teaspoon Italian herbs for flavor

Method
 

Prepare Sushi Rice
  1. Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
  2. Once cooked, transfer the rice to a mixing bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold this mixture into the rice gently.
Assemble the Sushi
  1. Place a sheet of plastic wrap on the sushi mat. Spread a thin layer of sushi rice over the plastic wrap, leaving a small border at the top.
  2. Layer the mozzarella, prosciutto, roasted red peppers, and basil on top of the rice.
  3. Using the sushi mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.
Slice and Serve
  1. Using a sharp knife, slice the sushi roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
  2. Serve the Italian sushi with a dipping sauce made from balsamic vinegar, olive oil, and Italian herbs.
