Method
Prepare the Chicken
- If not already cooked, grill or sauté the chicken until fully cooked, about 15-20 minutes. Let it cool and then shred or dice.
- In a large mixing bowl, combine the cooked chicken with the chopped romaine lettuce, cherry tomatoes, red onion, pepperoncini, and black olives.
Make the Dressing
- In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, and black pepper until well combined.
Combine and Serve
- Pour the dressing over the chicken salad mixture and toss until everything is evenly coated.
- Serve immediately or refrigerate for up to an hour before serving for the flavors to meld.
