Ingredients
  

Chicken and Vegetables
  • 2 cups cooked chicken shredded or diced
  • 1 cup romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup pepperoncini sliced
  • 1/4 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Chicken
  1. If not already cooked, grill or sauté the chicken until fully cooked, about 15-20 minutes. Let it cool and then shred or dice.
  2. In a large mixing bowl, combine the cooked chicken with the chopped romaine lettuce, cherry tomatoes, red onion, pepperoncini, and black olives.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the chicken salad mixture and toss until everything is evenly coated.
  2. Serve immediately or refrigerate for up to an hour before serving for the flavors to meld.
