Ingredients
  

Pasta and Chicken
  • 12 oz linguine or any pasta of choice
  • 1 lb boneless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil for cooking chicken
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Cowboy Butter Sauce
  • 1 stick unsalted butter melted
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp paprika smoked or regular
  • 1 tsp Worcestershire sauce

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the linguine in a colander.
Cook the Chicken
  1. In a skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper.
  2. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
Prepare the Cowboy Butter Sauce
  1. In a bowl, combine melted butter, minced garlic, parsley, chives, lemon juice, paprika, and Worcestershire sauce. Mix well.
Combine and Serve
  1. Add the cooked linguine to the skillet with the chicken. Pour the cowboy butter sauce over the pasta and toss to combine.
  2. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  3. Serve immediately, garnished with additional parsley if desired.
