Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes peeled and sliced into rounds
Toppings
  • 1 cup black beans cooked and drained
  • 1 cup shredded cheese cheddar or a blend
  • 1 medium jalapeño sliced
  • 1 medium avocado diced
  • 1/4 cup sour cream for serving
  • 1/4 cup fresh cilantro chopped for garnish
Seasoning
  • 1 teaspoon olive oil for tossing sweet potatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
Bake Sweet Potatoes
  1. Spread the sweet potato rounds in a single layer on a baking sheet.
  2. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until tender and slightly crispy.
Assemble Nachos
  1. Once the sweet potatoes are done, remove them from the oven and layer them on a serving platter.
  2. Top with black beans, shredded cheese, and jalapeño slices.
  3. Return to the oven for an additional 5-7 minutes, until the cheese is melted.
Serve
  1. Remove from the oven and top with diced avocado, sour cream, and chopped cilantro.
  2. Serve immediately and enjoy!
