Assemble Nachos
- Once the sweet potatoes are done, remove them from the oven and layer them on a serving platter.
- Top with black beans, shredded cheese, and jalapeño slices.
- Return to the oven for an additional 5-7 minutes, until the cheese is melted.
Serve
- Remove from the oven and top with diced avocado, sour cream, and chopped cilantro.
