Prepare the Cornbread Batter
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a mixing bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, mix milk, honey, melted butter, and egg until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
Bake the Cornbread Poppers
- Spoon the cornbread batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and let cool slightly before removing from the tin.
Prepare the Honey Butter
- In a small bowl, mix softened butter and honey until smooth and well combined.
- Serve the cornbread poppers warm with honey butter on the side.
