Ingredients
  

Cornbread Batter
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup honey
  • 1/4 cup unsalted butter melted
  • 1 large egg
Honey Butter Topping
  • 1/4 cup unsalted butter softened
  • 1/4 cup honey

Method
 

Prepare the Cornbread Batter
  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix milk, honey, melted butter, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
Bake the Cornbread Poppers
  1. Spoon the cornbread batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean.
  3. Remove from the oven and let cool slightly before removing from the tin.
Prepare the Honey Butter
  1. In a small bowl, mix softened butter and honey until smooth and well combined.
  2. Serve the cornbread poppers warm with honey butter on the side.
