Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts
  • 6 cups chicken broth low sodium recommended
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Noodles
  • 2 cups egg noodles uncooked

Method
 

Prepare the Ingredients
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the sliced carrots, celery, diced onion, and minced garlic on top of the chicken.
  3. Pour the chicken broth over the vegetables and chicken.
  4. Season with thyme, parsley, salt, and pepper.
Cook the Soup
  1. Cover the crockpot and cook on low for 6-8 hours or until the chicken is cooked through and tender.
Add Noodles
  1. About 30 minutes before serving, shred the chicken in the crockpot and add the egg noodles.
  2. Stir well and cover to cook until the noodles are tender.
Serve
  1. Taste and adjust seasoning if necessary. Serve hot.
