High Protein Ground Turkey Stuffed Sweet Potato

Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes washed and scrubbed
Ground Turkey Filling
  • 1 lb ground turkey lean
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup black beans cooked and drained
  • 1 cup corn canned or frozen
  • 1 cup cheddar cheese shredded
  • 1 tbsp olive oil for cooking
  • to taste salt
  • to taste pepper
Toppings
  • 1 avocado sliced for garnish
  • 1/4 cup cilantro chopped, for garnish
  • 1/2 cup Greek yogurt for serving

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Pierce each sweet potato several times with a fork and place them on a baking sheet.
  3. Bake in the preheated oven for 40-45 minutes, or until tender.
Cook Ground Turkey Filling
  1. In a skillet, heat olive oil over medium heat.
  2. Add diced onion and minced garlic, sauté until softened, about 5 minutes.
  3. Add ground turkey, cumin, paprika, salt, and pepper. Cook until turkey is browned and cooked through, about 7-10 minutes.
  4. Stir in black beans and corn, and cook for an additional 5 minutes until heated through.
  5. Remove from heat and stir in half of the cheddar cheese.
Assemble and Serve
  1. Once sweet potatoes are cooked, remove them from the oven and let cool slightly.
  2. Slice each sweet potato in half lengthwise and scoop out a small portion of the flesh to create space for the filling.
  3. Fill each sweet potato half with the ground turkey mixture.
  4. Top with remaining cheddar cheese and return to the oven for 5-7 minutes until cheese is melted.
  5. Serve topped with sliced avocado, chopped cilantro, and a dollop of Greek yogurt.
