Prepare Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- Pierce each sweet potato several times with a fork and place them on a baking sheet.
- Bake in the preheated oven for 40-45 minutes, or until tender.
Cook Ground Turkey Filling
- In a skillet, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until softened, about 5 minutes.
- Add ground turkey, cumin, paprika, salt, and pepper. Cook until turkey is browned and cooked through, about 7-10 minutes.
- Stir in black beans and corn, and cook for an additional 5 minutes until heated through.
- Remove from heat and stir in half of the cheddar cheese.
Assemble and Serve
- Once sweet potatoes are cooked, remove them from the oven and let cool slightly.
- Slice each sweet potato in half lengthwise and scoop out a small portion of the flesh to create space for the filling.
- Fill each sweet potato half with the ground turkey mixture.
- Top with remaining cheddar cheese and return to the oven for 5-7 minutes until cheese is melted.
- Serve topped with sliced avocado, chopped cilantro, and a dollop of Greek yogurt.
